Get one for yourself and buy some to pass along to those people in your life who could use a little encouragement to eat and get healthy.
As promised, here’s a sneak peak inside the pages of Unprocessed. These are super easy and super delicious and they are my new post-workout treat:
In the bowl of a food processor, grind 2 cups of unsalted peanuts into a fine powder…
Then add 1 cup pitted dates and 1 cup dried, tart cherries…
process until a ball forms…and then add in the vanilla and process again.
I patted the mixture into a 9″x9″ pan lined with parchment paper, but you could also form these into balls. Keep in the refrigerator.
Recipe courtesy of Chef AJ. Coming up in future posts I’ve got food porn photos of: Portabella Mushroom Stroganoff, Sweet Potato Nachos, Berried Treasures with Macadamia Nut Creme, Kung Pau Tofu, Ginger Slaw and Nutrient Rich Black Bean Soup.

Um, why haven’t I made those yet? Or some of the other recipes you are going to feature? I thought I’d made most everything out of that book 🙂 YUM!
Just don’t make the PB&J Bites before tomorrow ;-)!
Nudge Nudge, wink wink 😉
Yum. I make a pnb and jelly ball that’s very similar, but I cheat and use already prepared nut butter 😉 If I don’t win a copy of this book, I might have to purchase a copy. Every recipe I’ve seen from it looks delish!
Everything I’ve made has been delicious – definitely worthy of a space on your bookshelf!
Yum. Looks like I need to break out the food processor!
Fire ‘er up!
I can imagine these being very welcoming and satisfying after a workout, they look fantastic.
I forgot to mention that they also smell terrific!
Yum this would be delicious with tea. Couldn’t wait to make this one. I’m looking forward to hear more about the recipes you’ve tried from this book particularly the savory ones. Salt is my weakness apparently.
Got a bunch of savories coming up, Richgail!
Btw I didn’t know vanilla extract usually has alcohol?? Strange.
I found it hard to get vanilla extract without it!
This one sounds salty and sweet at the same time, which is a definite weakness of mine! I have a surplus of dried cherries at the moment, and I think there’s some peanuts up in the cupboard too….hmmmm. These look like they’ll be good on the plane on Sunday! And I don’t have turn on the oven! Result! 🙂
Yes, exactly – nice saltiness with a sweet kick. Yum! Oh, perfect travel food!
Ohhh nommm! These look great! I would have a hard time making these last!
Yep, my batch is gone already…
I swear I can’t wait to see all the recipes from this book, they all look delicious!

Delish! I am in the market for a new food processor after blowing my last one up. This recipe inspires me to go find one today! Thanks, Annie! xx
Your photos are always so lovely–I am not a huge fan of peanuts, but this post has me wanting them now! I would love to see the recipe (or some details about) for the Portabella Mushroom Stroganoff! That sounds fantastic.
Hi Courtney! Thanks for the compliment! The mushroom stroganoff is really good – very rich and creamy. Never miss the fat!
I swear I am obsessed with mushrooms…put them and nutritional yeast in anything and I will eat it!
ah yes pb and j bites! love these
What a neat recipe! I love (love love love!!) peanut butter! And I’m a huge fan of the PB&J combo. Thanks for sharing the recipe. 🙂
Shannon, I’m a peanut butter addict! And PB with J?? Forget about it!
Oh my goodness these look so yummy. I love the look of your blog–so clean and such great photos!
Love the simplicity here and I bet they taste amazing!!
