One thing I discovered (though I’d already suspected it) while participating in the Green Smoothie Challenge: I eat too much bread.  It’s not that I felt a dramatic physical difference; I just felt lighter and just a little bit better.  So I’ve committed to reducing my bread/grains/carbs intake.  That doesn’t mean, however, that Sunday morning breakfast is getting kicked to the curb, no sirree Bob.  I’m nothing if not a deeply flawed human.

Chocolate Orange Cinnamon French Toast

You don’t need eggs to create this soul-satisfying breakfast! Whisk together a few ingredients, add a touch of orange and spice and you have delicious, crispy-tender French toast!


  • 46 slices thick, whole-grain bread (I leave the slices out overnight to firm up)
  • 1/4 cup cashews, soaked for a few hours
  • 3/4 cup almond milk
  • 1/4 tsp. ground cinnamon
  • 1 Tbsp. unsweetened cocoa
  • 1/2 tsp. vanilla extract
  • zest of 1/2 an orange
  • sweetener to taste (I used a few dashes of stevia powder)
  • cacao nibs, optional
  • sliced strawberries, optional


  1. Rinse and drain the cashews, then put into a blender along with everything but the orange zest. Blend until very smooth – give it a minute or two. Pour the mixture into a deep-sided baking pan and stir in the orange zest.
  2. Don’t forget to warm some plates in a 200-degree oven. French toast loves warm plates!
  3. Heat a large cast iron or non-stick skillet over medium heat. I spritz mine very lightly with oil.
  4. Dip the slices of bread into the chocolate-cashew mixture and then carefully place in the heated pan. Brown on one side – be patient and don’t cook too quickly. Then gently flip and brown on the other side. Keep toast warm in the warm oven while you cook the remaining slices.
  5. Serve with cacao nibs, strawberries and warm maple syrup.

    Mmmm what an absolutely wonderful Sunday breakfast and that little jar of maple syrup looks very tempting to pour over the top of those strawberries and cacao nibs. I’m quite sure I eat too much bread and would feel better for cutting down. In fact, I think I have noticed that on days when I eat less I do feel lighter, but it’s hard not to use it as a staple, it’s so useful and easy and tastes so good!

    I looooove french toast! Although, I was thinking about it, and how awful would it be described to someone who didn’t know what it was? It’s bread… that you dip in liquid so it gets soggy, and then you cook it! haha. I love how you used cashews in there, I bet it tastes amazing

    Okay, I’ve always HATED french toast. Never liked the way the cooked egg looked on it or something back from childhood. This one looks awesome! In fact, if you did away with the bread, it would make an delicious smoothie? Stop making things that I want to make! There aren’t enough meals to make them for X)

    I’m soooooo making this for my omnivore husband for his birthday breakfast. But I think I’ll pan-fry some banana slices and add a dollop of coconut yoghurt too.

      Um, yeah! Bananas and coconut can only make this recipe better. Over the top better!

      Can’t give bread up entirely – and gee – I do LOVE making/baking it…Just have to back off a bit, hehe!

    You know what’s strange? I was always that person who didn’t really like chocolate… until recently. And I think it’s recipes like this that are converting me! I also don’t make nearly enough fancy breakfasts like this… I gotta work on that, starting with this one!

    Life without bread is difficult!!! Right now I am trying to see how is life without bread, and oh man, it is very very difficult, especially that there are amazing bakeries on EVERY corner in Athens. So far I didn’t experience much ‘lightness’ from giving up grain, but I certainly miss bread. I can’t say I miss other grains or cooked starches, like rice or potatoes, but oh man, bread, could I ever live without it long term?! I think not.

    I’m confused…I read the recipe over and over, I saw where you say to mix all the wet ingredients but orange zest, then you instruct to add orange zest then you say to put it in a deep side baking pan, then all the sudden it talks about a pan and says to dip slices of bread in mixture…I thought the recipe was making the bread? Is it only making the mixture to dip the bread in? Because I didn’t see where it said what degree to cook the bread or how long and you said you left “it” out overnight…what is “it”? Sorry if this is a stupid question 🙁 I’m new to this blog. I’m a low-carb vegan, I keep less than 20 net carbs a day and it IS A CHALLENGE! BUT once I lose the weight I need to, I’d love to add a dish like this, I’m just a bit confused on how to make it 🙂 forgive my stupid question I’m just not clicking with something here 🙂

      Desiree, sorry to hear you’re confused about the recipe – but I think I can set you straight ;-). This recipe isn’t for making the bread, it’s for the batter to make French toast. You’ll see at the beginning of the recipe that I list that you’ll need “4-6 slices thick, whole-grain bread.” The rest of the recipe lists the ingredients for the batter. I do have lots and lots of bread recipes on my site, however! Anyway, hope that helped and best of luck with losing the weight you want to lose.
