Vegan Cornbread

Ingredients

  • 1 1/4 cups whole wheat pastry flour
  • 3/4 cup corn meal
  • 2 tsp. baking powder
  • 3/4 cup almond or other non-dairy milk
  • 1/4 cup fresh orange juice
  • 1/4 cup coconut oil, melted
  • 1 Tbsp. flaxseed meal + 3 Tbsp. water (whisk together until frothy)
  • 12 Tbsp. pure maple syrup
  • 1/2 cup fresh or frozen corn

Instructions

  1. Preheat the oven to 400-degrees F and lightly oil a 9-inch pie plate or 9-inch x 9-inch square baking dish.
  2. In a large bowl, whisk together the flour, corn meal and baking powder. In a smaller bowl, mix together the milk, orange juice, coconut oil, flaxseed meal mixture and maple syrup.
  3. Pour the liquid ingredients into the dry and add the corn. Stir until thoroughly combined. Pour into the prepared baking dish and bake for 20-25 minutes. Allow to cool for a few minutes before slicing.
