Some have said, “An Unrefined Vegan? Yeah, girlfriend can’t do gluten-free!” Well, I’m here to tell you not only that I can, but that I AM doing GF over at Richa’s blog today. That’s right – old Ms. Whole Wheat Pastry Flour is hangin’ at Vegan Richa today with a rice flour-xanthan-gum kinda recipe for chocolatey and blueberrily whoopie pies.

    I see GF Waffles in your future. Loved the post over at Richa’s and I love the blueberry filling. I’m on a bit of a blueberry phase myself and you played right into it. Especially using frozen….those babies couldn’t be more expensive fresh in the stores right now 🙁

      I know…GF waffles have been on my mind but I’m afraid! Berries are crazy right now, which makes sense, of course – but I love fresh berries! On the other hand…frozen blueberries are often much sweeter than the fresh, so there ya go.

      Me, too! And to complicate matters, I’ve been hearing a lot of GF folks trash-talking xanthan now. Not sure what the issue is, but figures that would happen just as I start learning about how to bake GF. Maybe I should just stick with wheat :-).
