Some have said, “An Unrefined Vegan? Yeah, girlfriend can’t do gluten-free!” Well, I’m here to tell you not only that I can, but that I AM doing GF over at Richa’s blog today. That’s right – old Ms. Whole Wheat Pastry Flour is hangin’ at Vegan Richa today with a rice flour-xanthan-gum kinda recipe for chocolatey and blueberrily whoopie pies.
Be sure and spend some time exploring her site when you visit. You WILL leave hungry. Thank you, Richa, for inviting me to share!
Going…going…GONE! 😉
Hehe – as indeed they were!
I SWEAR I typed that before I went to the post and saw that post script…what do they say about great minds? 😉
Haha!
Cool beans! Love the colors of both the cake and the filling – heading over there right now to snag that recipe!
Cool adzuki beans ;-)!
Had I known the wonderful adzuki beans were part of this recipe – you do rock my friend! – I would have been more specific 😉
🙂
PLEASE tell me you have at least five of these left.. I will buy a plane ticket right now just to come eat these. HOLY FLAVOR combo wowness!
I wish I did – just to lure you here! But these were history long, long ago. So sad.
I love that bite picture!! gorgeous blueberry filling! Thanks for the guest post Annie!!
Thank you, Richa :-)!
you have to be kidding! this looks and sounds beyond good! love it!!! 🙂
Thank you! They turned out rather nicely 🙂
I see GF Waffles in your future. Loved the post over at Richa’s and I love the blueberry filling. I’m on a bit of a blueberry phase myself and you played right into it. Especially using frozen….those babies couldn’t be more expensive fresh in the stores right now 🙁
I know…GF waffles have been on my mind but I’m afraid! Berries are crazy right now, which makes sense, of course – but I love fresh berries! On the other hand…frozen blueberries are often much sweeter than the fresh, so there ya go.
You did not do gluten free, you nailed it 🙂
Cheers

Nicely said, CCU!
That cake looks so wonderful…and that filling…yummie.
🙂 Thank you, Bridget!
This look so yummy! Love the color of the blueberry filling 🙂
Isn’t it pretty? Thank you!
Very pretty 🙂
Thank you!
I think my sister should make these the next time we’re together. 🙂
I love the rich purple color of the filling! Celeste:)
Me, too! I was thrilled it came out so purple-y!
Your photos are beautiful and I love the addition of the grape hyacinths and daffodil. What a perfect little spring treat!
The grape hyacinths went crazy this year! Even infiltrated the lawn, which I thought was great.

Some gorgeous recipes on Vegan Richa including this amazing Blueberry Whoopie Pie
You made my Saturday!! Thank you so much!
So pretty! I can’t wait to read all about it. I’m impressed that you tried your hand at gluten-free baking. Those gums perplex me!
Me, too! And to complicate matters, I’ve been hearing a lot of GF folks trash-talking xanthan now. Not sure what the issue is, but figures that would happen just as I start learning about how to bake GF. Maybe I should just stick with wheat :-).

Oh yes, yes you did! Sorry for missing this last week. I was crazy. Incredible girl! I want that last slice!
No apologies necessary! I’d still be hiding in a closet in the fetal position after that catering job!
love it!
🙂 Thank you!
Spent too much time here looking for the recipe….never did find it !
Hi Susan – Sorry for any frustration you felt, but I hope that you got some enjoyment from searching my site. Please note in my blog post that I direct the reader to Vegan Richa’s blog for the recipe. The whoopie pie recipe is NOT on my site. You can find it here: https://www.veganricha.com/2013/04/annies-chocolate-and-blueberry-creme.html
