A Weird & Wonderful Salad: Paulie’s Slaw. Oil-free.

Paulie's Slaw An Unrefined Vegan

My friend Paul sifts through the raw, rocky ore of the Internet like Yukon Cornelius searched for silver. You might remember Paul from my Hibiscus-Cherry Cooler post – he’s the one who sent me 3 lbs. of hibiscus tea because he’d read that it had cancer-fighting properties. And what Paul has unearthed in his meticulous research is that the consumption of animal products is related to the plethora of diseases plaguing too many Americans. Imagine that!

Taking this information to heart, Paul has greatly reduced his intake of animal products and increased the amount of fresh fruits and vegetables. He has embraced kale and placed beans high on a plant-based pedestal. He doesn’t follow recipes, he just chops and combines and cooks. His concoctions are nutritional powerhouses with an emphasis on cancer-fighting superfoods.

Despite Paul’s love of the computer, he is not one for emails, so when I received one from him recently, I took notice. There were only 11 words in it: Sweet onion, celery, broccoli, cabbage, lemon, lime, grapefruit, sherry wine vinegar. Huh? I was intrigued, so I tinkered and came up with the following recipe. This slaw tastes great by itself (on the first day or even several days later), but is incredible on top of jackfruit pulled pork – especially when you get a little bite of grapefruit with the spicy-sweet jackfruit. (I slightly modified the pulled jackfruit recipe from this site. Delicious!)

Description

Don’t let the crazy ingredient list throw you off. It works! This veggie slaw is loaded with crunch, flavor, and really healthy ingredients.

Ingredients

Scale
  • 1/4 of a small head of red cabbage, thinly sliced
  • 1/4 cup Vidalia onion, chopped (I soak mine in cold water for about 15 minutes)
  • 2 ribs celery, chopped
  • 1 cup broccoli, chopped into small pieces
  • 1 small grapefruit, peeled (squeeze the juice from the peel into the bowl), chopped into small pieces
  • zest of 1 lemon
  • zest of 1 lime
  • splash of white wine or sherry vinegar
  • pinch ground black pepper

Instructions

  1. Combine all of the ingredients in a bowl and stir well to combine.
  2. Serve immediately, or store in the refrigerator if you like a slaw with a little less crunch.

sounds like it’s something. I love slaws, and a brokkoli slaw is already a thing, so I guess this isn’t that weird after all ^^

Have you ever tried raw fennel slaw/salad with orange? It’s sooooo refreshing in summer!

Err…not sure if I am supposed to be entering again?! How confusing! I don’t often get to enter giveaways so the protocol escapes me ;). Cheers, again, for the chance to enter. It makes a lovely change 🙂

Cheers for the chance to win. We “other worlders” often feel excluded when we read U.S. blogs. We completely understand why the give aways can’t be open to everyone and so it’s lovely to be able to enter 🙂

Um, I think I really like Paulie. Really wishing I had another can of jackfruit and a head of cabbage right now. I could eat that for breakfast 🙂

I find it funny that Jackfruit is so good. Back in the day when I worked for a Thai importer I was “what do people do with this?” every time I saw it in the warehouse…..

I love the grapefruit in this. I always love that citrus / vinegar party goin on. Did you use red grapefruit?
I can just imagine a bowl of this with a couple ears of fresh corn too. Thx Annie. Thx Paul 😛
