Beta Carotene Sipper An Unrefined Vegan

Along with that little bit of leftover chipotle in adobo and that smidgen of tomato paste, I inevitably end up with some pumpkin puree after opening up a can.  This drink was born when Kel brought in a huge pile of carrots – the last ones from the greenhouse harvested before it got too hot – and that forlorn scoop of pumpkin puree chiding me from its glass container in the refrigerator.

Description

Sweet, refreshing, and slightly spicy, this sugar-free, nutrition-packed Beta Carotene Sipper will cool you down while it heals and nourishes!


Ingredients

Scale
  • 2 cups chilled carrot juice (fresh or bottled – make sure it’s 100% carrot juice)
  • 1/4 cup pumpkin puree
  • 1 large frozen banana
  • 2 Tbsp. unsweetened coconut flakes
  • 56 drops liquid vanilla-flavored stevia or pure maple syrup, to taste
  • ~1/2 tsp. fresh ginger root
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground cinnamon

Instructions

  1. Put all ingredients in a high-speed or regular blender and process until smooth.
  2. Serve chilled.

    Delicious! I LOVE pumpkin + carrots and chow them every day in mass quantities, so this a wonderful addition to my daily intake (even though I turn orange/yellow afterwards…whoops!). Also, your background/setting is beautiful. 🙂

    I love the coconut combo with the ginger and heck, I’d drink this up just for the colors alone! Homemade carrot juice is so easy, it’s a real shame to buy it in the store, especially when you can vamp it up like this 😉
