The dishes that I most enjoy preparing and sharing here are desserts, but I do actually eat savory foods, too, and this is one of those recipes. If you purchase the pizza dough/flatbread instead of making your own, you can prepare this Jackson Pollock-esque meal with a minimum of time and fuss.

CHIPOTLE SAUSAGE, PEPPERS, & GUACAMOLE FLATBREADS with CILANTRO CREAM

Description

Yummy south-of-the-border flavors combine in these easy single pizzas. Chipotle Sausage, Peppers, and Guacamole Flatbreads that are 100% plant-based.


Ingredients

Scale
  • 4 flatbreads (8- to 10-inches wide each), homemade or otherwise

Guacamole

  • 2 avocados, pitted and peeled
  • 1 tsp. fresh lime juice
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. chili powder
  • 1/4 tsp. garlic powder
  • pinch smoked paprika

Topping

  • 2 cups sliced mini bell peppers (8-10)
  • 2 vegan chipotle sausages, such as Field Roast, sliced

Cilantro Cream

  • 1/2 cup raw cashew pieces, soaked for a few hours, rinsed and drained
  • 2 cloves garlic
  • 2 cups fresh cilantro (about 1 bunch)
  • 1/2 cup low-sodium vegetable broth
  • 1 tsp. fresh lime juice
  • 1/4 tsp. ground black pepper

Instructions

Make the guacamole

  1. In a small bowl, smash the avocados until as smooth or as chunky as you like – and then stir in the remaining ingredients. Cover and set aside.

Make the toppings

  1. In a small skillet, heat a small amount of water or vegetable broth over medium-high heat and add the bell pepper slices. Sauté for 5-8 minutes, or until crispy-tender. Remove the peppers and add another splash of water or broth. Gently cook the vegan sausage slices, letting the liquid cook off before adding small splashes, until they are lightly browned.
  2. Remove from the heat, add the bell peppers and cover the skillet to keep the mixture warm while you make the cilantro cream.

Make the cilantro cream

  1. In a high-speed or regular blender, combine all of the ingredients and process until very smooth.

Assemble the flatbreads

  1. Gently warm the breads, divide the guacamole and the bell pepper-sausage mixture between them, and then either spoon on the cilantro cream or use a squeeze bottle to drizzle over the top of the flatbreads.
  2. Garnish with chopped fresh cilantro, if desired.

    Oh my Gosh Annie!! This looks soooo good!! This is MY kind of meal! Everything…printing this one out. Also, isn’t Field Roast the most amazing sausage ever?! My hubby and I absolutely love it. We don’t eat it too often because of the oil content, so it’s rare, but on a special occasion, it’s the ultimate treat! It’s actually on my to-do list to create my own version…gluten and oil-free.

    P.S. I love that you are still posting recipes regularly on your blog, even though I know you are crazy busy with your cookbook! Very wise my dear!

      I often make my own chipotle sausage, but sometimes, ya know, it’s just easier to pick up Field Roast :-P. I’d be interested in seeing a GF variety, Brandi!

    This looks so simple and tasty! I love Field Roast sausage the best, but I’m addicted to the apple and sage one. Maybe it’s time to branch out.

      The apple-sage ones are great, too! I also have some of their breakfast sausage, but haven’t tried it yet. The chipotle variety is VERY spicy.

    We’re on the same wavelength with our flatbreads! Just shared a flatbread recipe with tomatoes and basil cream!
    Love the flavours here and I really must try field roast some time. I think it’s available in a couple of places here now.
