Vegan Mango Frozen “Latte”

Vegan Mango Frozen Latte by An Unrefined Vegan Clearly I’m taking liberties here with the term latte – but since I’m vegan, I’m comfortable taking all kinds of liberties with food terms like “cheese,” “chik’n,” “meringue,” “omelet,” etc. In this cooling frozen latte, that creamy layer on top isn’t foamed milk, it’s cashew cream (is there anything better, really?) – and it adds richness to the fruity mango beneath it. Mangoes are plentiful right now so Kel and I are eating them to beat the band – and also freezing slices for future snowy-day smoothies. Winter isn’t THAT far off! Mango (nutritional) Madness!:

  • Soft and creamy as they are, mangoes have about 3 grams of fiber per cup, helping to keep you all regular-like.
  • Get about 35% of your daily Vitamin A (good for eye and bone health) needs with one sweet cup of juicy mangoes.
  • That one cup of mango also provides you with 76% of your daily Vitamin C, too!

Description

Cool and creamy, thick and fruity! An easy mango smoothie with a luscious layer of cashew cream “foam.”


Ingredients

Scale

Smoothie

  • 2 fresh mangos, pitted, peeled, and chopped
  • 1 cup frozen mango chunks
  • 1 13.6-ounce can lite coconut milk
  • 1/2 cup water
  • 1 Tbsp. ground chia seeds
  • 610 vanilla-flavored stevia liquid, or your favorite sweetener, to taste

Cashew Cream

  • 1/2 cup raw cashew pieces, soaked for 1530 minutes, rinsed and drained
  • 1/2 cup water
  • 510 drops vanilla-flavored stevia liquid, or your favorite sweetener, to taste

Instructions

Make the cashew cream

  1. Put all of the ingredients into a high-speed blender and process until very smooth. Scrape into a measuring cup and set aside.
  2. No need to clean out the blender before making the mango smoothie.

Make the smoothie

  1. Put all of the ingredients into a high-speed blender and process until very smooth.
  2. Divide the smoothie between 4 glasses, leaving about 1/2-inch on top for the cashew cream “foam.” Gently pour the cashew cream on top of the smoothies. Serve immediately.

    Are those little bees on the side of the glass? I bought one like that for my dad because he admired it when his juice was served in one in a cafe. I wish I liked mangoes. They’re the one fruit I can think of that I really don’t like. I love the colour of them though, and this drink looks beautiful with the cashew cream foam on top.

      Yes! I love these glasses! What is it about mangoes that you don’t like? I love the flavor, but notice that some fruit has a chalkiness to it that I don’t like. Happily when it’s all joojed in a blender it’s not noticeable.

        It’s the flavour I don’t like, I don’t know why. I first tasted them in Pakistan fresh off a tree and perfectly ripe, so it’s kind of strange that I don’t like them. It’s a great pity because I often see juices that look lovely with mango in them, and every now and then I try again but it’s never good.

    Latte away my friend! Ain’t no body got claim on the word! No coffee in this…no problem! I see that foam at the top…looks like a latte to me! 😉
